Chef Takuya Umeda started his culinary career in Sapporo, Japan in a sushi restaurant between 1981 to 1987. There, he fell in love with the art of sushi. With his heart and passion set on becoming the best sushi chef, he started working in London at Saga Japanese Restaurant between 1987 to 1995. Realizing to be the best sushi chef you need to learn from the best, he started working with famed chef Nobu Matsuhisa at Nobu, London between 1997 to 2003. He learned style, technique and influences on dishes. Thereafter, he came to Beverly Hills to work at Nobu’s Matsuhisa until 2017. His dreams of opening his own restaurant were fulfilled by opening Umeda, a modern sushi establishment featuring many dishes that were influenced by his experience with Nobu Matsuhisa.
