According to manager Jose Rivera and owner Jared Standing, the turkeys from this boutique butchery make for a special meal. “The turkeys that we have this year are local pasture-raised, organic-raised birds coming from San Diego’s Stehly Farms. What makes them special is they are a bird native to that farm region in San Diego county, they’re fed the farm’s produce; organic items that don’t get sold in the farm’s produce store gets introduced into their diet,” Rivera says. “So they are eating a variety of foods from berries and avocados to nuts, good nutritional food and also organic beer grains which are recycled from local breweries, which gives them a delicious umami flavor.”
